Bacon Cheeseburger Meatballs

Looking for something new to spice up your carnivore or keto diet? This was super yummy and the whole family loved it! Even the kids loved it, no they’re not on the diet with us but it was an awesome meal for everyone!

Not only did it remind us so much of a burger but it was fun and easy to eat as well. The meat mixture had such an amazing flavor with the bacon mixed in. It was an absolute hit and sure to make everyone happy!

Make sure you cut your cheese a little earlier in the day and throw it in the freezer. The colder the better and it will keep it from melting as quick while the meatballs are cooking.

This meal required a bit of prep, but nothing too bad. It was also a great meal to have help from the kids, although mixing it can be a pain.

I want to make a note that we made a huge double batch because there are seven of us, plus we wanted to have some leftovers for the next day.

One thing that I feel is pretty important to add is that the bacon should be thin/regular cut, not thick cut. The bacon is inside the meatballs and has a hard time cooking fully if it’s too thick. Also, learn from my mistakes and chop the bacon as small as you can, use a food processor for best results. You want the bacon to cook and release it’s juices in the meatballs.

These meatballs came out so freaking good! The cooking time can vary and it’s really important to check it a few times to make sure the juices aren’t over flowing your pan. If they are you’ll want to just remove the pan and drain some into the sink. Don’t worry about getting rid of it all, that’s where most of the good flavor is.

Our meatballs leaked out the side a little bit towards the end of cooking. It kind of looked like a mess but it didn’t really matter because it was so delicious.

Bacon Cheeseburger Meatballs

On our carnivore and low carb journey this has become one of our favorite regular meals. The kids love it too!

Equipment

  • Large Baking Sheet Very important to use a baking sheet with a lip all around. This recipe causes a lot of liquid when cooking and using a flat pan with no edges will be a huge mess in your oven.
  • Kitchen Scissors Or food processor/chopper if you have one

Ingredients

  • 1 lb Ground Beef
  • 1/5 lb Bacon
  • 1 lb Ground Pork
  • 1 block Your Choice of Cheese We used a mix pepper jack and sharp cheddar
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Instructions

  • Place ground beef and ground pork in a bowl
  • Using sharp kitchen shears cut the bacon into small pieces. The smaller the better. Another option is to put bacon in a food processor or chopper to ground it up. We didn't have access to that so we cut with scissors.
  • Put bacon right in the bowl with the other meats.
  • Add salt and pepper to mix. Another option is to use a Montreal steak seasoning of your choice. Or really any seasonings that you would like in your "burger".
  • Mix all meats and seasoning thoroughly using your hands. It's kind of hard not to over stir but do your best to fold instead of squishing it all together. Do the best you can, it doesn't have to be perfect. Gloves are a really good idea to use during this step.
  • Put bowl of meat in the refrigerator until you're ready for use.
  • First you'll want to cut your cheese block into small pieces. Mine were a little smaller than an inch. closer to 3/4 inch.
  • VERY IMPORTANT – Take your cheese and place it in the freezer. You'll want it close to being frozen to prevent it from melting too quickly.
  • Once you're ready to assemble you'll want to pull your meat mixture from the refrigerator and the cheese from the freezer.
  • This part gets messy so you can wear gloves or just use your hands. Take Meat and pull out about 2 tbsp of the meat mixture, flatten in your palm, and use the other hand to put a single cheese block in the middle of your flattened mixture.
  • Then you'll want to carefully wrap the meat around the cheese making sure you don't have any gaps in the meat mixture.
  • Place meatballs on an ungreased baking sheet. They don't need much space for baking because they shrink significantly during the cooking process.
  • Once finished you can place the baking sheet into a 350 degrees preheated oven. We baked our meatballs for about 40 minutes. The trick with this step is to check it often and judge by how cooked the bacon is. Once the bacon is cooked to your preference the meatballs will be done.
  • While the meatballs are cooking check periodically in case you need to drain some fat off the pan. We had to pull the tray about half way through and let some of that liquid off the pan. Some is totally fine, you just don't want to have it overflow from the side of the pan.
  • Once meatballs are fully cooked you can use a spatula to put them on plates and then serve.
  • This is a messy, fatty meal but absolutely perfect for anyone on the carnivore diet or even a low carb high fat diet.
  • I sprinkled mine with flaky salt to taste afterwards and served with thousand island dressing (thousand island is not carnivore friendly FYI).
