Crispy Jalapeno Popper Bites – Low Carb & Carnivore

These have become an absolute favorite in our house. The combination of cheese, grilled chicken, cream cheese, pickled jalapenos, and of course BACON makes these super indulgent and quite addicting.

Ingredients

  • 4 oz Cheddar Cheese Any cheese combination will be delicious!
  • 8 oz Mozzarella Cheese
  • 1/2 lb Chicken Breast We used freshly cooked chicken but canned chicken or rotisserie chicken would work as well.
  • Cream Cheese
  • Pickled or Fresh Jalapenos
  • Salt, Pepper, Garlic Seasoning

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Cut your raw chicken breast into small pieces. I made them into bite sized pieces but still cut them smaller at the end. Skip this step if you have precooked chicken.
  • Put avocado oil, or any oil of your choice, into a frying pan. Place raw chicken breast in the pan, coat with salt & pepper. I used the Kinder salt pepper garlic blend which was super yummy. Feel free to season with your favorite seasoning, anything will be good. Skip this step if you have precooked chicken.
  • Shred your cheese. We did a whole block of mozzarella and half a block of cheddar cheese. You can also buy pre-shredded cheese.
  • Place all of your cheddar equally in an ungreased muffin tin.
  • Chop chicken into smaller pieces and place a small layer into each muffin tin.
  • Using a knife, cut about 1 tsp of cream cheese and place in the middle of each cup. You can use cream cheese in a tub as well and use a spoon.
  • After the cups are layered with cheddar, chicken, and cream cheese you will want to stuff them with the rest of your cheese. Don't be scared to have too much cheese because they do shrink down as they cook.
  • Once all cups are topped off with the mozzarella cheese (or any cheese of your choice) you place the jalapeno on top. If you are practicing carnivore or don't like spice you can omit this step. Another fun option is to place a banana pepper or even a sliced pickle on top if you don't like spice.
  • Place muffin tin into the preheated 400 degree oven and cook for 20-30 minutes. This step will vary widely based on how filled your muffin cups are.
  • When the edges of the muffin cups start to crisp you will want to pull it out of the oven and test it out. It will be really hot but they pop out of the muffin tin very easily. They take a few minutes to crisp up because they are melted cheese.
  • Once they are cooked to your preference they're done! I use a spoon to removed them all from the pan and place them on a cool plate so they can harden up. Give them a few minutes before you bite into them because the cream cheese in the middle will be HOT! Enjoy!
