Easy & Simple Sun-Dried Tomatoes

This is seriously so easy and absolutely delicious!! A few weeks ago we needed sun dried tomatoes for a recipe and of course completely forgot to buy them in the store. I frantically searched through the cabinet and found nothing. That’s when I decided to make them myself.

You see, we’ve been on a little bit of a cleaner eating journey in our life so one by one I’ve been creating things from scratch that we used to just buy premade and canned/jarred in the store. I decided this would be the perfect time to start experimenting.

One of the most important things that we learned is that salt goes a LONG way! Like seriously, take it easy with the salt because these cook down significantly and the salt stays. I love salt and always over salt things and the first time it was almost too much for me. And while we’re on the topic of salt, I have to share my favorite salt because I’m literally obsessed. I use it whenever possible and even sent it to family members as gifts. So if you’re a salt lover like me, you’ll want to get yourself some Maldon Flaky Salt. It’s seriously so worth it!

Not only was this recipe basically effortless but it made the house smell amazing and was an awesome addition to our meal Creamy Chicken & Shrimp.

We’ve made this quite a few times now and did a few different ways and this was by far the best. The only thing I didn’t do this time was add fresh basil when cooking. The fresh basil made such an amazing flavor.

Another thing you’ll want to do when they’re done is try to collect all that yummy goodness of flavor leftover on the sheet pan. The oil and seasonings can be added right into your mixture.

Easy & Simple Sundried Tomatoes

Ingredients

  • Tomatoes Any kind can work, we used the basic ones from Aldi but this would work with any variety.
  • Italian Seasoning
  • Olive Oil
  • Flaky Salt
  • Black Pepper
  • Fresh Basil Optional

Instructions

  • First you'll want to lightly grease a baking sheet with oil of your choice. Olive oil is a great choice because you'll ultimately be mixing some into your final product. We also spread out a small amount of leftover bacon fat for flavor but this is totally optional.
  • Next you'll want to slice your tomatoes into thin slices. The thinner they are the quicker they'll cook. We cut them about 1/3 inch thick.
  • Sprinkle salt, pepper, and Italian seasoning evenly over the top of all tomatoes. ***VERY IMPORTANT*** Make sure you don't over salt the tomatoes, they will shrink down significantly and that salt will be stronger after the condense down.
  • If using fresh basil you'll want to chop it finely and sprinkle it over the top of the tomatoes.
  • Heat the oven to 225 degrees and place the pan inside.
  • The time is going to vary significantly depending on the temperature, thickness, and your desired preference for the finished effect. We cooked ours in about 2.5 hours. You can also raise the temperature of the oven if you're in a hurry, just make sure to adjust the cooking time.
  • Continue checking your tomatoes every 30-45 minutes. Less time when they're getting close to being done.
  • Once the tomatoes are cooked to your desired done-ness you can pull them out and chop them finely, or leave them in larger chunks. Totally up to you!
  • You can store this in a mason jar or use it right out of the oven in a great meal.
  • We also drizzled a little extra extra virgin olive oil over the tomatoes and of course sampled them. Now you can add additional salt or pepper if needed.
